My First ALL YOU Recipe


I don't know that the picture does it justice, but YUMMY!!! Serves 4(their # not mine, I am the only one that ate it tonight due to me starting to cook it to late. so I fed the boys something else, but I could eat on it 3+ more times, so I would say serves 4-5 depending on portion size) and cost $2.25 per serving(that is great!!)

Need based stop at Kroger


Uhh, I didn't enjoy having to go to the grocery store today. I needed some stuff for the recipes I am trying this week (and others that I will try later). So I had to make a stop at Kroger. I did use 3 coupons to save some money but not a great savings day. Sometimes that just happens though, when you need stuff.
Here is what I spent: $20.79(cash!!)

All the other stuff I bought the cheapest I could and compared unit prices and using a coupon on the name brand vs. buying generic. I really need to stock up on canned stuff so I started with buying a few canned kidney beans and some refried beans, etc.

Today's Tip from The Green Year: 365 Small Things You Can Do to Make a Big Difference: Toss your synthetic kitchen sponge and buy a sponge made fro cellulose fibers instead.

"Synthetic sponges are made from nonrenewable resources and are often soaked in chemicals like triclosan that have antibacterial and antimicrobial properties. Triclosan is also a pesticide that could destroy aquatic life. Triclosan is one of the most common manmade chemicals found in our rivers and streams.

Cellulose fiber comes from recycled wood pulp and is fully biodegradable. They're also much longer lasting than synthetic sponges. Look for cellulose sponges in the cleaning product aisle of any supermarket"

Freezing Vegetables for Storage

Thanks PYP for this info!

Freezing vegetables usually requires blanching in boiling water, cooking, or steam blanching prior to freezing. After blanching, cool in ice water for 1 1/2 times the blanching time.
Start counting your blanching time as soon as the vegetable is placed in hot water or a steamer. Use the best quality freezer bags or containers to prevent freezer burn. I use my Food Saver. Squeeze as much air as possible from your bags before freezing. You can stack bags in a box before putting into the freezer. Make sure you label your bags with the vegetable name and the date. Use the vegetables within 8-12 months.

These are the blanching times for vegetables that I have previously frozen.:

Asparagus – Blanch medium stalks 3 minutes; large stalks 4 minutes

Bean Pods – Blanch 3 minutes

Broccoli/Cauliflower – Remove tough leaves; Remove ends; Slice stalks lengthwise; blanch 3 minutes or steam 5 minutes

Brussels sprouts – Soak in salt brine* for ½ hour; Blanch small for 2 minutes; medium for 4 minutes; large for 5 minutes

Cabbage – Blanch wedges for 3 minutes; shredded for 1 ½ minutes

Carrots – Trim, wash and scrape the carrots; dice or slice them; blanch for 2 minutes

Corn on the Cob – Blanch small ears 7 minutes; medium 9 minutes; large 11 minutes

Herbs – Wash and drain, but don’t blanch; wrap sprigs or leaves in foil, or seal in a plastic bag; put inside a carton or glass jar in your freezer

Peas – Green 1 ½ minutes; Sugar Pods, Blanch for 1 ½ to 3 minutes depending on size; Remove the strings from pods before blanching.

Green and Red Peppers – Cut in two and remove seeds; Blanch halved peppers 3 ½ minutes – these work great for stir fry or fajitas.

Squash – Wash, cut into pieces, remove seeds, and bake until tender; After cooling, scoop out the pulp from the rind and freeze

Potatoes – Don’t freeze well unless prepared as food first, such as French fries, hash browns; for new potatoes, wash and scrape skins off, then blanch 4 minutes for very small up to 10 minutes for very large – eat frozen new potatoes within one month for best flavor and texture

Zucchini/Yellow Squash– Cut into pieces, then blanch for 3 minutes

Tomatoes – Wash and core your tomatoes; cut them up; Don’t blanch, cook until soft

When I have an abundance of avocado I make guacamole and then just freeze it. Make sure you add lemon or lime juice to help minimize darkening.

Coupons for Overseas Troops**Important Annoucement**

To all my couponer gals (and gents), I received a letter in the mail today from the overseas direct for The Fleet and Family support center of our troops. They are requesting that we no longer send coupons to them. As they have become overwhelmed with the amount of coupons that are mailed to them and they have become unable to distribute all of them. They thank us for our efforts! They also asked me to pass the word along to others, so I am!!
Way to go- we all so wanted to support our troops and their families in saving that we overwhelmed them! I think that is a good problem for them to have....don't you!?

Having Problems Printing Coupons?

 Sadly there is not one answer than fix everyone’s problems.  Here are some tips to try to help though.
First, Many links are browser specific:
Jenny at Southern Savers has already change any links for readers using Internet Explorer (IE) or FireFox (FF) as their browser.  These are listed as printable (IE) or printable (FF).
If you run across a link surfing the internet here’s how to change it yourself:
A Link:

See the “vg”?  That is one little part that makes this link only work in Firefox.  If anyone tried to print it in another web browser it would sit on the “sending to printer” screen indefinitely.
Want to make it for Internet Explorer?
Change the “vg” to “vi”
Want to make it for Safari?
Change the “vg” to “xs”
Sometimes the link will have a “wg” this works the same, just change the “wg” to “wi” for (IE) or to “xs” for Safari.

That’s great but I can’t print from any link!
Try these tips to see if any will work:
1.  Download a new version of Java.
2.  Go to the website for your printer’s manufacturer and see if they have a new print driver you can download and install.
3.  Try switching web browsers.  Firefox and Safari are free to download and use.
4.  Your firewall may be too strong.  Try turning off your firewall, printing, and then turning it right back on.
5.  If your internet runs through a router in your house, try hooking the computer you are using directly to the modem or internet.  This is to test whether the firewall in the router is too strong.
6.  If you use a MAC - many sites do not support (IE) on Macs.  Please only use Safari and Firefox.
7.  If you have Windows 7 - Very few sites support printing with ANY browser on a Window’s 7 platform.  Sorry.  Hold tight and they will support you eventually.  If you still have your old computer then use it for now just for printing.
